Riverway Mikes Bourbon Maple Sweet Potato Hash



-2 lbs sweet potatoes peeled and cubed ½ inch

-5-7 slices of Wassi’s Apple Pie Bacon cut into 1/2-inch pieces

-2tbls Butter

-2tbls Runamuck Maple Syrup (Holiday Spice)

-1/2 teaspoon of nutmeg

-2tbls of Wassi’s Bourbon Maple Reserve rub

-1 large sprig of rosemary


Preheat Big Green Egg to 350

In a Dutch oven cook chopped bacon until crispy, remove and set aside for later, reserve the bacon fat in the Dutch oven. Add butter and melt with the bacon fat, then add rosemary sprig, nutmeg, Wassi’s Bourbon Maple Reserve rub and heat and stir to infuse the flavors into the oil. Add in cubed sweet potatoes and toss to get them coated with the butter mix. Cover the Dutch oven and place in the Big Green Egg for 20-30 minutes until cubes have softened up. Stir in the Runamuck Maple Syrup, more Bourbon Maple reserve to taste, then finally the cooked Apple Pie bacon pieces. Cook uncovered for an additional 7-10 minutes stirring occasionally until potatoes are done, remove rosemary sprig, serve and enjoy!!
