RiverWay Mike Meatloaf on the Big Green Egg
Ingredients:
- Meatloaf
- 2 lbs ground chuck
- 3 large eggs
- 1 cup bread crumbs
- 1 med. onion chopped
- 1/4 cup brown sugar
- 1/2 cup fresh parsley
- 1/2 cup cilantro
- 2 tbls of Pork_U Rib Rub
- 1 tbls of Pork_U Garlic 101
Mix all meatloaf ingredients together an put on BGE @300° indirect. Brush on sauce 3 times in the last 20 minutes. Cook to internal temp of 150°.
Sauce
50/50 mix of Lane's Southbound and Kinda Sweet.
Hasselback Potatoes
- 6 Potatoes white or red
- 1/2 stick of butter melted
- 1 tbls Garlic 101
- 1 tbls of thyme
Slit potatoes on a spoon. Then cover in mix of butter, garlic 101, and thyme. Place on BGE until done reapply herb butter half way through cook.
